Set the gpu to 900mhz (not powertools, just in the normal settings) Cryoutilities 2.0 also helps in my opinion. Made botw playable at mostly 30 fps for me. Sometimes mods help, e.g.: 60fps patch for link's awakening. Basically everything I mentiones helps a little bit - a lot with all of it together.

Make sure Cemu opens in desktop mode, then in desktop mode "install" the game and DLC by clicking on the meta files. "Load" the game in Cemu and make sure it runs in desktop mode. Switch to game mode and it should work! That's the overview of how I did it. 1.

Yes the wiiu emulator is much more mature and has more graphical options. With a good pc you could play BotW in 4k. Wii U easier to run. My quick take: yes CEMU is more mature but it also happens to just run better on the deck compared to YUZU. It still has some graphical bugs, but is otherwise stable. You'll see flickering trees, fog effects don't render properly and rain effects make it look like the rain is falling in slow motion. So if you're okay with that, then shouldn't be a problem.
